Big Brother Little Brother Fishing

On Monday when the weather was still so nice, Mitch wanted to go fishing. Justin was willing to teach him how to fly fish so off we went to ASU Research Park. Justin is a good teacher. He was very patient with Mitchell.
With fly fishing, you walk around the pound. Maybe you do with regular fishing, but the people we saw at the pond fishing were just sitting. Justin and Mitch took off and I went to find photo ops. See the bubble bee?

Justin and Mitchell caught 2 fish that day.
I enjoyed sitting by the lake and watching the wildlife that was around. I was in deep thought and wondered why we live here. We should move up north somewhere where it is cool everyday and the boys could be out all the time. Maybe someday.

Summer time

I am loving the summer break! I enjoy not having to get up and drive children to school. I can't believe we are down one week already. Boo Hoo....anyways I have all these ideas in my head and tonight I can cross one off. I finally did this project that I've been wanting to try for the last few weeks.

Vandals Baseball Weekend

The Az Vandals had yet another tournament this weekend. We came away Saturday 2-0 but left Sunday knocked out of the tournament. Mitchell had a great weekend at the plate and some awesome catches in the outfield. I was really proud of how far my son and his team have come. Keep up the good work guys.This pretty much sums up our playing Sunday.Grace after two days of baseball.I don't blame her. We had such wonderful weather this weekend it made it so much more fun. If it had been "normal" I don't think Grace and I would have been at all four games.

Happy Cinco De Mayo


 

Or Happy Birthday to my big brother! I promise to get a card in the mail later today. I wanted to share a favorite recipe with you all out there in blogland. Shelley and my friend KLM got together and made some  salsa the other day. We were only missing the margaritas. Go make some for dinner tonight and celebrate the 5th of May.

You will need  3 to 4 cloves of garlic, 1 large sweet onion, 2 or 3 med. tomatillos, 3 or 4 jalapeno's, 1 to 2 bunches of cilantro, 2   24oz cans of whole tomato, 1 can tomato paste, red wine vinegar and salt.

 

 

 

***NOTE*** We made a very large batch. The ingredients I listed above are for a single batch.

Peel garlic cloves

Onions Quarter sweet onion and place in food processor.

 

jalapenos Cut jalapeno's. Take seeds out but leave the veins. Blend together until it is the consistency you want.

 

Picture 083 Tomatillos can be found near the jalapeno's in the produce section. Tomatillos have a paper shell around them. Make sure you peel the paper back and make sure the tomatillos are not moldy.

Picture 087 Shelley is opening a can of tomato paste. The trick here is to open both ends

 

Picture 088 then you can just push the paste thru the can into the food processor.

 

Picture 089 Add the whole tomatoes and puree.

 

Picture 092 Add tomato mixture to the onion, jalapeno, tomatillos mixture. KLM suggest to use a plastic bowl as a metal bowl messes with the acidity of the salsa. I'll do what she says because I love this stuff.

Picture 094 Wash the cilantro and place in the food processor and add a little of the mixture from above and press pulse until it looks like

Picture 100 Add to the plastic bowl and add some salt. Where are the chips?

 

Picture 104 Add red wine vinegar to taste.

 

 Picture 107 Find some chips and enjoy.

Recipe from KLM

2 24oz cans peeled WHOLE tomatoes

1 large sweet onion

1 6oz can tomato paste

3-4 cloves garlic - to taste

2 average size bunches cilantro (but this is the one ingredient you want to have more of to control the heat)

5-6 average sized fresh tomatillos

3-4 Jalapeno's seeded but not deveined (again, to taste)

2-3 T. Red Wine Vinegar

salt - to taste, but this sort of helps bind all the flavors

LOTS OF TORTILLA CHIPS!!!!
